  • 340 g cooked, cleaned crabmeat (12 ounces)

  • 200 g sliced avocado (1 large avocado)
  • 15 g chopped fresh parsley (¼ cup)
  • 80 g lettuce leaves (8 large leaves)

Preparation

  1. Mash the potatoes, cook the potatoes until tender, peel them while still warm, and press them through a potato ricer. Let the mashed potatoes cool to room temperature so they remain light and easy to shape.
  2. Season the potato mixture, add 60 ml of lime juice, vegetable oil, ají amarillo, and salt. Mix with clean hands or a spatula until the mixture is smooth, even, and moldable. Taste and adjust the salt if needed.
  3. Make the crab filling, check the crabmeat carefully for any shell fragments, then combine it with mayonnaise, 30 ml of lime juice, and cayenne pepper. Fold gently so the crab remains light and retains some texture.
  4. Assemble the causa, spread half of the potato mixture into a small rectangular dish or four individual molds. Press gently into an even layer, arrange the avocado slices over it, and spread the crab filling on top.
  5. Finish and chill, cover with the remaining potato mixture and smooth the surface with a lightly dampened spatula. Refrigerate for 30 minutes so the causa firms up and is easier to slice or unmold.
  6. Garnish and serve, place the causa over fresh lettuce leaves, sprinkle with chopped parsley, and serve chilled. Add a small amount of mayonnaise to each portion just before serving, if desired.
