  • 1 kg bone-in chicken pieces with skin (6 medium pieces)
  • 8 g salt (1 ¼ teaspoons), divided
  • 3 g ground black pepper (1 teaspoon)
  • 60 ml vegetable oil (4 tablespoons), divided
  • 20 g garlic paste (1 ½ tablespoons)
  • 45 g ají panca paste (3 tablespoons)
  • 30 g ají amarillo paste (2 tablespoons)
  • 300 g red onion, cut into thick slices (3 medium onions)
  • 50 g fresh ají amarillo, cut into strips (2 medium peppers)
  • 180 ml red wine vinegar (¾ cup)
  • 240 ml chicken stock (1 cup)
  • 5 g ground cumin (1 ½ teaspoons)
  • 3 g dried oregano (1 teaspoon)
  • 2 bay leaves
  • 5 g sugar (1 teaspoon)
  • 600 g cooked and peeled yellow sweet potatoes (4 medium sweet potatoes)
  • 4 large hard-boiled eggs
  • 80 g botija black olives (16 olives)
  • 120 g lettuce leaves (1 small head)

Preparation

  1. Season and brown the chicken, season the chicken with 5 g of salt and black pepper. Heat 30 ml of oil in a large skillet over medium-high heat and brown the chicken on both sides for 8 to 10 minutes, until the skin is deeply golden. Remove it and set it aside.
  2. Make the seasoning base, add the remaining oil to the same skillet and cook the garlic paste, ají panca paste, ají amarillo paste, cumin, and oregano for 2 minutes. Stir constantly so the peppers cook gently without burning.
  3. Build the escabeche sauce, add the red onion, fresh ají amarillo, bay leaves, vinegar, chicken stock, sugar, and remaining 3 g of salt. Cook over medium heat for 8 minutes, until the onion softens but still keeps some texture.
  4. Cook and marinate the chicken, return the chicken to the skillet, cover it with the sauce, and cook covered over low heat for 20 minutes, until fully cooked. Let it cool in the sauce, then refrigerate for at least 4 hours so it develops the classic escabeche flavor.
  5. Serve it traditionally, place lettuce leaves on each plate and arrange one chicken piece with plenty of onion and sauce. Add cooked sweet potato, half a hard-boiled egg, and botija olives. Serve cold or at room temperature.
