Ingredients

  • 1.5 kg fresh mussels in their shells
  • 180 g red onion, finely diced (1 large onion)
  • 180 g seeded tomato, finely diced (2 medium tomatoes)
  • 120 g cooked corn kernels (¾ cup)
  • 15 g ají limo chili, seeded and finely chopped (1 small chili)
  • 20 g fresh cilantro, chopped (½ cup)
  • 75 ml freshly squeezed lime juice (5 tablespoons)
  • 5 g salt (¾ teaspoon)
  • 2 g ground black pepper (½ teaspoon)
  • 1 l water


Preparation

  1. Clean the mussels, wash the shells thoroughly under cold water, remove the beards, and discard any mussel that stays open when touched. Gently scrub the shells to remove any remaining debris.
  2. Cook the mussels, place the mussels and water in a large pot, cover, and cook over high heat for 5 to 7 minutes, until the shells open. Remove and discard any mussels that remain closed.
  3. Make the chalaca salsa, combine the red onion, tomato, corn, ají limo, cilantro, lime juice, salt, and black pepper. Let the mixture rest for 5 minutes so the flavors blend while the onion remains crisp.
  4. Assemble the dish, remove and discard one shell from each mussel, leaving the meat attached to the other half. Arrange the mussels on a wide platter and spoon one tablespoon of chalaca salsa over each one.
  5. Serve immediately, bring the choros a la chalaca to the table as soon as you assemble them. They should taste fresh, citrusy, lightly spicy, and juicy.
