  • 60 ml vegetable oil (4 tablespoons)
  • 1 liter chicken broth (4 cups)
  • 10 g ground cumin (2 teaspoons)
  • 5 g ground black pepper (1 teaspoon)
  • 10 g annatto powder or coloring (2 teaspoons)
  • 12 g salt (2 teaspoons)
  • 20 g chopped fresh cilantro (4 tablespoons)

Preparation

  1. Prepare the giblets, wash the gizzards, hearts, and livers thoroughly. Simmer the gizzards for about 30 minutes until tender, then chop them along with the remaining giblets.
  2. Make the flavor base, heat the oil in a large pot and sauté the onions, scallions, bell pepper, and garlic for about 5 minutes. Add the tomatoes, cumin, pepper, annatto, and salt, and cook until thickened.
  3. Cook the giblets, add the chopped giblets and sauté for about 8 minutes so they absorb the flavors.
  4. Add the rice, stir in the washed rice and cook for 2 minutes.
  5. Cook the rice, pour in the hot chicken broth and cook until most of the liquid is absorbed. Cover, reduce the heat, and cook for about 20 minutes until the rice is fully cooked.
