Description

Crisp Arequipa rosette pastries made with a hot iron mold and served with manjar blanco.


Ingredients

  • 250 g all-purpose flour (2 cups)
  • 500 ml whole milk (2 cups)
  • 100 g beaten egg (2 large eggs)
  • 30 g sugar (2 tablespoons)
  • 5 ml vanilla extract (1 teaspoon)
  • 1 g salt (1/4 teaspoon)
  • 750 ml vegetable oil for frying (3 cups)
  • 200 g manjar blanco or dulce de leche (3/4 cup)


Preparation

  1. Make the batter, whisk together the milk, eggs, sugar, vanilla, and salt. Gradually add the flour and whisk until smooth and fluid. Let the batter rest for 15 minutes.
  2. Heat the mold, heat the oil over medium heat and place the ponderaciones or rosette iron in the oil for 2 minutes.
  3. Fry each piece, drain the mold briefly, dip it into the batter without covering the upper edge, and immediately return it to the oil. Fry until the pastry releases and turns golden.
  4. Repeat and serve, repeat with the remaining batter. Drain the pastries on paper towels and serve with manjar blanco.
