  • 400 g very fresh firm white fish fillet, skinless and boneless, cut into 2 cm cubes
  • 250 g cleaned squid, cut into rings
  • 250 g cleaned and peeled shrimp
  • 150 g cooked octopus, sliced
  • 180 ml freshly squeezed lime juice (¾ cup)
  • 150 g red onion, thinly sliced (1 large onion)
  • 20 g ají limo chili, seeded and finely chopped (2 small chilies)
  • 20 g fresh cilantro, chopped (½ cup)
  • 8 g garlic paste or finely grated garlic (2 large cloves)
  • 7 g salt (1¼ teaspoons)
  • 2 g ground black pepper (½ teaspoon)
  • 250 g cooked and peeled sweet potato (2 medium sweet potatoes)
  • 400 g cooked corn on the cob (2 large ears)
  • 100 g toasted cancha corn (¾ cup)
  • 6 washed lettuce leaves

Preparation

  1. Cook the seafood, bring a pot of water to a boil and cook the squid for 1 minute and the shrimp for 2 minutes, only until they turn opaque and stay tender. Drain them and cool them immediately in ice water to stop the cooking.
  2. Prepare the sides, cook the sweet potatoes in their skins until tender, about 25 minutes, and boil the corn until the kernels are soft. Let them cool, peel the sweet potatoes, and cut them into thick slices.
  3. Season the ceviche base, place the fish, squid, shrimp, and octopus in a chilled bowl. Add the salt, black pepper, garlic, half of the ají limo, and half of the cilantro. Toss gently so the seafood does not break apart.
  4. Build the leche de tigre, pour in the lime juice and add half of the red onion. Toss for about 30 seconds, then let it rest for only 3 to 5 minutes. The liquid should taste bright, fresh, and well seasoned.
  5. Finish and serve, add the remaining onion, ají limo, and cilantro. Arrange lettuce leaves on the plates, spoon over the mixed ceviche with plenty of leche de tigre, and serve with sweet potato, corn on the cob, and toasted cancha corn immediately.
