  • 300 g boiled sweet potato, sliced (2 medium sweet potatoes)

Preparation

  1. Prepare the clams, carefully open the black clams and place both the meat and their natural liquid in a chilled bowl. Check carefully for shell fragments and keep the clams refrigerated while preparing the remaining ingredients.
  2. Soften the onion, place the sliced red onion in cold water for 5 minutes. Drain it thoroughly and combine it with the ají limo, cilantro, garlic, salt, and black pepper.
  3. Make the ceviche, add the black clams and their liquid to the onion mixture. Pour in the fresh lime juice and toss gently for a few seconds, taking care not to break the clam meat.
