  • 2 g annatto powder or Colombian color seasoning (1 teaspoon)
  • 5 g salt (1 teaspoon)
  • 1 g ground black pepper (1/4 teaspoon)
  • 60 ml water (1/4 cup)

Preparation

  1. Cook the onions, heat the oil in a skillet over medium heat and add the scallions, white onion, and garlic. Cook for 4 minutes, stirring often, until the onions are soft and fragrant.
  2. Add the seasonings, stir in the cumin, annatto powder, salt, and black pepper. Cook for 30 seconds so the spices blend into the oil and release their aroma.
  3. Cook the tomatoes, add the chopped tomatoes and water. Stir well, partially cover the skillet, and cook over low heat for 15 to 20 minutes, stirring occasionally, until the tomatoes break down and the hogao becomes thick and juicy.
