  • 2 hard-boiled eggs, chopped

Preparation

  1. Prepare the sofrito, heat the oil in a skillet and sauté the onion, tomato, and bell pepper for about 5 minutes until softened and fragrant.
  2. Cook the beef, add the ground beef along with the cumin, annatto, salt, and pepper. Cook for about 10 minutes, stirring frequently until the meat is fully browned and crumbly.
  3. Finish the filling, add the cooked peas and chopped eggs, stir well, and cook for 2 additional minutes to blend the flavors.
  4. Assemble the dish, place a layer of rice in a deep mold or bowl, spread the beef filling evenly over it, and cover with the remaining rice, pressing gently to compact.
