Ingredients
- 1 whole chicken, in pieces
- 300 g beef
- 300 g pork
- 200 g bread, soaked in milk
- 1 onion, chopped
- 60 g ají amarillo paste
- Parsley, allspice, oregano, bay leaf, cinnamon, cloves, garlic, and nutmeg, for the spice paste
- 300 g potatoes
- 100 g olives
- 50 g raisins
- 50 g almonds
- 100 ml wine
- Chopped huacatay, to taste
- Grated cheese, for serving
- Salt to taste
Preparation
- Cook the meats, boil the chicken, beef, and pork in water until tender. Remove and shred.
- Prepare the spices, grind the parsley, allspice, oregano, bay leaf, cinnamon, cloves, garlic, nutmeg, and salt into a paste.
- Make the base, sauté the onion and ají amarillo in oil until golden, then stir in the spice paste.
- Combine everything, add the broth, shredded meats, milk-soaked bread, and potatoes, and cook over low heat.
- Enrich the soup, once the potatoes are golden, add the olives, raisins, almonds, sugar, and wine.
- Serve, adjust the salt, add chopped huacatay, and serve hot topped with grated cheese.
