- Make the escabeche, sauté the sliced onion with ají amarillo and vinegar, add the fish, and cook a few minutes.
- Cook the sides, boil the sweet potato and corn, and fry the plantain slices until golden.
- Serve, shape the causa with the mash, top with the fish escabeche, and serve with the sweet potato, corn, cassava, and fried plantain.
