Tomaseca del Pacífico

Tomaseca is a traditional Colombian Pacific Coast drink made with viche, herbs, sugarcane syrup and spices. It is closely connected to the knowledge of Black Afro-Colombian communities in Chocó, Valle del Cauca, Cauca and Nariño, where prepared bottles are passed down through families and local traditions.

There is no single fixed recipe. Each viche maker may use a distinct blend of plants and proportions. Ingredients

  • 500 ml authentic Colombian viche (2 cups)
  • 250 ml sugarcane syrup or panela syrup (1 cup)
  • 250 ml water (1 cup)
  • 20 g fresh nacedera leaves, washed (1 loosely packed cup)
  • 1 cinnamon stick, about 3 inches long
  • 4 whole cloves
  • 15 g grated panela (1 tablespoon), optional

Preparation

  1. Make the infusion, combine the water, sugarcane syrup, optional panela, cinnamon stick and cloves in a small saucepan. Cook over low heat for about 8 minutes, stirring until evenly blended.
  2. Add the herbs, remove the saucepan from the heat, add the nacedera leaves, cover and let the mixture rest for 20 minutes so the herb can release its aroma.
  3. Strain and cool, strain the mixture to remove the leaves and spices. Let it cool completely to room temperature.
  4. Add the viche, pour the viche into a clean glass bottle or jar, add the cooled infusion and shake gently until combined. Do not heat the mixture after adding the viche.
  5. Let the tomaseca mature, close the bottle and store it in a cool, dark place for 5 to 7 days. Shake it gently once daily to help the flavors blend.
  6. Chill and serve, refrigerate the tomaseca for at least 2 hours before serving. Pour it into small cordial glasses and enjoy responsibly.
