  • 300 g white or yellow precooked cornmeal (2½ cups)
  • 250 g grated fresh cheese, campesino cheese, or costeño cheese (2 cups)
  • 360 ml warm water (1½ cups)
  • 30 g melted butter (2 tablespoons)
  • 4 g salt (¾ teaspoon)
  • 15 g butter for cooking or serving (1 tablespoon)

Preparation

  1. Make the dough, place the precooked cornmeal in a large bowl and add the salt. Pour in the warm water little by little while mixing with your hands, until the cornmeal hydrates and you get a soft, moist dough with no dry lumps.
  2. Add the cheese, mix in the grated or crumbled cheese and the melted butter. Knead for 3 to 4 minutes, until the cheese is evenly distributed and the dough feels flexible. If it feels dry and cracks, add 1 or 2 tablespoons of warm water; if it feels too soft, let it rest for a few minutes.
  3. Shape the arepas, divide the dough into 6 equal portions and roll them into balls. Flatten each one into a disc about 10 to 12 cm wide and 1 cm thick, smoothing the edges so they do not split while cooking.
  4. Cook the arepas, heat a griddle or heavy skillet over medium heat and grease it lightly with butter. Cook the arepas for 5 to 6 minutes on each side, until golden, firm, and lightly crisp on the outside. The inside should be hot, tender, and filled with the flavor of the cheese.
  5. Serve hot, remove the arepas from the griddle and serve them right away. You can carefully open them and add more cheese or a little butter, as is common in many Colombian breakfasts.

Practical Tips

Use a fresh cheese that is not too wet so the dough keeps its shape.

If you use costeño cheese, reduce the salt because this cheese is usually saltier.

Do not cook the arepas over very high heat; they may brown too quickly outside and stay undercooked inside.

Let the dough rest for 5 minutes before shaping if it feels too soft.

Traditional Variations

In some regions, cheese arepas are made with grated costeño cheese, which gives them a stronger and saltier flavor.

In other homes, campesino cheese or fresh cheese is used for a softer, milder arepa.
