- 150 g butter, at room temperature
- 4 cloves garlic, minced
- 2 tablespoons oil
- Salt to taste
- Black pepper to taste

- 1 tablespoon dried rosemary (or 3 tablespoons fresh chopped rosemary)
- 1 tablespoon dried thyme (or 3 tablespoons fresh chopped thyme)
- 1 teaspoon paprika
- 1 large onion, cut into quarters
- 2 carrots, cut into pieces
- 2 celery stalks
- Juice of 1 orange
- 1 cup chicken broth
Preparation
- Prepare the oven and the turkey. Preheat the oven to 163 °C (325 °F) and pat the turkey dry with paper towels, inside and out.
- Make the seasoned butter. In a bowl, mix the room-temperature butter with the garlic, oil, salt, pepper, cumin, rosemary, thyme, and paprika.
- Season the turkey. Rub the turkey all over with this mixture, coating the skin well and, if you can, working a little under the breast skin.
- Prepare the roasting pan. Make a bed of the onion, carrots, and celery in the bottom of the roasting pan and pour the orange juice and chicken broth over them. Set a rack over the pan and place the turkey on top, raised above the aromatics and liquid; the cavity stays empty.
- Protect the breast. Shape a loose tent of aluminum foil and place it over the turkey breast, without sealing the edges or wrapping the rest of the turkey or the pan. Keep the foil tent on for the first 60 to 90 minutes of cooking.
- Continue roasting. Remove the foil tent and keep roasting, basting the turkey with the pan juices every 30 minutes. If the skin browns too quickly before the turkey reaches temperature, put the foil tent back on.
- Check the temperature. From about 2 hours 45 minutes of cooking, start measuring the temperature in the deepest part of the thigh, the wing, and the thickest part of the breast. The turkey is ready when all three points reach at least 74 °C (165 °F).
- Remove and rest. Take the turkey out of the oven and let it rest for 20 minutes before carving so it does not lose its juices.
Note: For a 5 to 6 kg turkey, the total cooking time is usually between 2 hours 45 minutes and 3 hours 45 minutes. Use this range only as a reference: internal temperature is what counts.
