Description

Traditional Creole recipe made with beef, vegetables, and a touch of fruit, adapted into an easy-to-follow home version with exact proportions.


Ingredients

  • 700 g of beef (shoulder or roast beef cut), cubed (about 1.5 lb)
  • 2 tablespoons of oil
  • 1 of onion, sliced
  • 2 cloves of garlic, chopped
  • 2 of potatoes, cubed
  • 1 of sweet potato, cubed
  • 500 g of pumpkin or squash, cubed (about 1.1 lb)
  • 2 of ears of corn, sliced
  • 150 g of dried peaches (or apricots), soaked (about 5.3 oz)
  • 500 ml of beef broth (about 2 cups)
  • to taste of salt and pepper
  • 1 of large pumpkin, hollowed out (optional, for serving) (optional)


Instructions

  1. Sear the beef, cut the beef into cubes and sear it in a pot with hot oil until browned on the outside.
  2. Cook the onion and garlic, add the sliced onion and chopped garlic, and cook until the onion is golden.
  3. Add potato and sweet potato, stir in the cubed potato and sweet potato, and cover with the beef broth.
  4. Simmer, cover and cook for about 20 minutes, until the vegetables start to soften.
  5. Add the squash, stir in the cubed squash and keep cooking for another 15 minutes.
  6. Add corn and dried peaches, five minutes before finishing, add the sliced corn and the soaked dried peaches.
  7. Season and finish, adjust with salt and pepper, and cook a few more minutes until all the ingredients are tender.
  8. Serve, serve hot, traditionally inside a large hollowed-out, roasted pumpkin if you want the classic presentation.

Tips for getting it right

  • Searing the beef well at the start helps concentrate its flavor before adding the broth.
  • Soak the dried peaches ahead of time so they rehydrate and spread their sweetness evenly through the stew.
  • Add the corn and dried peaches near the end so they don’t fall apart from prolonged cooking.
  • If serving inside a pumpkin, roast the hollowed-out pumpkin separately until tender, and pour in the carbonada right before serving.

Traditional variations

  • Some recipes add rice near the end of cooking, for extra body in the stew.
  • It’s also made with dried apricots instead of peaches, depending on what dried fruit is available.
