Colombian obleas are a beloved street-food dessert made with two thin, crisp wafer discs filled primarily with arequipe, Colombia’s version of dulce de leche. Ingredients

  • 16 large round wafer discs
  • 400 g arequipe or dulce de leche (1¾ cups)
  • 180 g blackberry jam (¾ cup)
  • 150 g grated queso campesino or fresh farmer cheese (1½ cups)

Preparation

  1. Place 8 wafer discs on a clean, dry surface. Spread about 25 g of arequipe (2 tablespoons) over each wafer, covering most of the surface but leaving a small border around the edge.
  2. Add 20 g of blackberry jam (1 tablespoon) over the arequipe and spread it gently. Sprinkle 18 g of grated cheese, about 3 tablespoons, over each wafer so it is evenly distributed.
  3. Cover each filled wafer with another disc and press very gently to seal it without breaking it. Serve immediately, before the fillings soften the wafers.
