  • 500 g passion fruit pulp (2 cups)
  • 750 ml water (3 cups)
  • 180 g sugar (3/4 cup)
  • 30 ml fresh lime juice (2 tablespoons)
  • 600 g ice (5 cups)

Preparation

  1. Heat 250 ml of the water with the sugar until dissolved. Remove the syrup from the heat and let it cool.
  2. Briefly blend the passion fruit pulp with the remaining water, then strain to remove most of the seeds.
  3. Combine the juice, cooled syrup, lime juice, and ice. Blend in batches until thick and finely granular.
  4. Serve immediately in tall glasses, or freeze for 30 minutes and stir or blend again before serving.

Preparation Tips

  • Do not overblend the passion fruit seeds because they can add bitterness.
  • Adjust the sugar to the fruit’s acidity before adding the ice.

How to Serve

Serve immediately in tall chilled glasses with a spoon or wide straw.
