  • 1 kg fresh corn kernels from tender ears of corn (about 6 large ears)
  • 120 g fresh cheese, grated or crumbled (1 cup)
  • 60 g melted butter (4 tablespoons)
  • 40 g sugar or grated panela (3 tablespoons)
  • 6 g salt (1 teaspoon)
  • 80 ml milk (⅓ cup), only if the mixture needs it
  • 12 fresh corn husks, cleaned
  • Kitchen string or strips of husk for tying

Preparation

  1. Prepare the husks, carefully remove the husks from the ears of corn without tearing them, wash them, and set them aside. Choose the largest and most flexible ones for wrapping, because they will help hold the mixture during cooking.
  2. Grind the corn, cut the kernels from the cobs and grind them in a mill, food processor, or blender. If using a blender, add milk little by little only if needed, until you get a moist, thick mixture, not a runny one.
