Ingredients

  • 4 medium fresh corn cobs (about 800 g), cut into rounds
  • 500 g sabanera potatoes, peeled and diced (4 medium potatoes)
  • 150 g chopped green onions (6 stalks)
  • 10 g minced garlic (2 cloves)
  • 500 ml whole milk (2 cups)
  • 1.5 liters water or chicken broth (6 cups)
  • 20 g butter (1½ tablespoons)
  • 15 g chopped fresh cilantro (¼ cup)
  • 10 g salt (2 teaspoons)
  • 2 g black pepper (⅓ teaspoon)

Preparation

  1. Prepare the soup base, melt the butter in a large pot and sauté half of the green onions with the garlic for about 3 minutes until fragrant.
  2. Cook the corn, add the water or broth and the corn rounds. Bring to a boil and cook for about 20 minutes.
  3. Add the potatoes, stir in the potatoes and cook for 20 to 25 minutes until tender, allowing some pieces to partially break down.
  4. Add the milk, pour in the milk and the remaining green onions. Cook over medium heat for about 10 minutes without letting the soup boil vigorously.
  5. Finish the soup, season with salt and pepper, add the cilantro, and cook for 2 more minutes.
  6. Serve hot, making sure each bowl contains potatoes and pieces of corn on the cob.
