class=\"wp-block-heading\">Preparation<\/h2>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li><strong>Soak and cook the beans,<\/strong> rinse the canary beans and soak them for 8 hours. Drain them, place them in a pot with the 2 liters of water and bay leaf, and cook over medium heat for 1 hour and 15 minutes, until tender.<\/li>\n\n\n\n<li><strong>Make the bean seasoning base,<\/strong> heat the 2 tablespoons of oil in a skillet and cook the onion, garlic, and cumin for 6 minutes. Add this mixture to the beans, season with salt, and cook for 15 more minutes, until the beans are creamy and the broth has thickened slightly.<\/li>\n\n\n\n<li><strong>Blend the cilantro,<\/strong> blend the cilantro with 120 ml of beef stock (\u00bd cup) until smooth. Set the green sauce aside for the stew.<\/li>\n\n\n\n<li><strong>Brown the beef,<\/strong> season the beef with the cumin, black pepper, and 1 teaspoon of salt. Heat the 2 tablespoons of oil in a wide pot and brown the beef in batches for 8 to 10 minutes, until well colored on all sides.<\/li>\n\n\n\n<li><strong>Braise the seco,<\/strong> remove the beef and cook the onion in the same pot for 5 minutes. Add the garlic and aj\u00ed amarillo paste, cook for 3 minutes, then return the beef. Add the cilantro sauce, chicha de jora, and beef stock; cover partly and simmer over low heat for 1 hour and 15 minutes.<\/li>\n\n\n\n<li><strong>Finish and serve,<\/strong> add the carrot and peas to the seco and cook for 20 more minutes, until the beef is very tender and the sauce has reduced. Mix the sliced onion with aj\u00ed amarillo, lime juice, cilantro, and salt to make salsa criolla.
