Cook over medium heat for 1\u00bd to 2 hours, until tender. Remove about 120 g cooked corn (\u00be cup), mash it into a paste, and stir it back into the pot to thicken the drink naturally.<\/li>\n\n\n\n<li><strong>Make the panela syrup,<\/strong> add the panela, remaining 500 ml water (2 cups), cinnamon sticks, cloves, and bitter orange leaves to a small saucepan. Cook over medium heat for about 10 minutes, until the panela dissolves and the syrup becomes aromatic.<\/li>\n\n\n\n<li><strong>Combine the flavors,<\/strong> strain the panela syrup to remove the spices and leaves. Pour it into the pot with the corn, then add the lulo pulp and sour orange juice, if using. Stir well and cook over low heat for 5 more minutes.<\/li>\n\n\n\n<li><strong>Add the pineapple,<\/strong> stir in the diced pineapple gently. Remove the pot from the heat and let the champ\u00fas cool completely at room temperature.<\/li>\n\n\n\n<li><strong>Chill and serve,<\/strong> refrigerate for at least 4 hours so the flavors blend.
