tablespoons)<\/li>\n\n\n\n<li>2 g salt (1\/4 teaspoon)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">For the panela syrup<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200 g panela, grated or chopped (1 cup)<\/li>\n\n\n\n<li>180 ml water (3\/4 cup)<\/li>\n\n\n\n<li>1 cinnamon stick, about 5 g<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Warm the milk,<\/strong> pour the milk into a clean pot and heat it over low heat until it reaches 35 to 37 \u00b0C \/ 95 to 99 \u00b0F. It should feel warm, never hot or boiling.<\/li>\n\n\n\n<li><strong>Add the rennet,<\/strong> mix the rennet with the cold water and add it to the warm milk. Stir gently for 15 seconds, cover the pot, and let it rest for 40 to 50 minutes, until a firm curd forms.<\/li>\n\n\n\n<li><strong>Cut and drain the curds,<\/strong> cut the curd into cubes about 3 cm wide with a clean knife. Let it rest for 5 minutes, then carefully transfer it to a strainer lined with clean cotton cloth. Add the salt and let it drain for 30 minutes.<\/li>\n\n\n\n<li><strong>Make the panela syrup,<\/strong> place the panela, water, and cinnamon in a small saucepan. Cook over medium heat for 8 to 10 minutes, until the panela dissolves and forms a light syrup. Remove the cinnamon stick.<\/li>\n\n\n\n<li><strong>Serve the cuajada,<\/strong> divide the cuajada into six portions and spoon warm panela syrup over each serving.
