Cook over medium heat for 20 to 25 minutes, until tender when pierced with a fork but not falling apart.<\/li>\n\n\n\n<li><strong>Cool and cut,<\/strong> drain the cassava and let it rest for 10 minutes, until cool enough to handle. Remove the tough woody core from each piece, then cut into sticks about 8 cm long and 2 cm thick.<\/li>\n\n\n\n<li><strong>Heat the oil,<\/strong> pour the oil into a deep pot or wide skillet and heat it over medium-high heat. The oil should be hot enough to brown the cassava quickly without making it greasy.<\/li>\n\n\n\n<li><strong>Fry the cassava,<\/strong> add the cassava sticks in batches, leaving enough room around them. Fry for 5 to 7 minutes, turning as needed, until golden, firm, and crisp on the outside.<\/li>\n\n\n\n<li><strong>Drain and serve,<\/strong> remove the fried cassava with a slotted spoon and place it on paper towels.
